Smashed Veggies Recipe: Air Fryer Smashed Mushrooms

A fun twist on trendy smashed veggies!

Smashed veggies are a the hot new trend.

If you’ve been on food Instagram lately, you’ve probably seen videos of people making smashed vegetable recipes. Regular potatoes, sweet potatoes, carrots, broccoli, cauliflower…you name it, someone has smashed it. But quite frankly, we love this trend! The smashed veggies look delicious and as dietitians, we love finding fun ways to encourage vegetable intake. It’s a win-win!

Did someone say smashed mushrooms?

This popular recipe trend prompted us to create our own spin. As our chief recipe developer, Stacie decided to take a veggie that not everyone is a fan of and turn it into an instant classic. Here, air fryer smashed mushrooms were born! Lightly coated in bread crumbs and Parmesan cheese, these little mushrooms are so crispy and so so DELICIOUS!

Mushrooms are also incredibly nutritious!

Not only will this recipe make your mouth water, it is also highly nutritious. The health benefits of mushrooms often go unnoticed compared to other veggies. Let us tell you though, these are packed with essential nutrients your body needs. Mushrooms are a powerful vegetable that are a good source of vitamin D for bone health, selenium for immune support, and prebiotics for improved gut health. They are also rich in B vitamins to increase energy production. Mushrooms are low in calories and can be a great snack or appetizer for anyone looking to lose weight. If these health benefits are as enticing to you as they are to us, then the recipe below is a must-try!

Air Fryer Smashed Mushrooms Recipe

Ingredients:

  • 1 package of whole Bella mushrooms
  • 1 cup Italian seasoned bread crumbs
  • 2 whole eggs
  • Parmesan cheese to taste
  • Optional: garlic powder, onion powder, Italian herbs

Directions:

  1. Bring two cups of water to a boil. Wash mushrooms and add to boiling water. Boil for 15 minutes.
  2. In a bowl, whisk both eggs.
  3. On a plate, combine bread crumbs, Parmesan cheese, and spices.
  4. Once mushrooms are cooked, spread them out on a parchment lined baking sheet.
  5. Using a glass, smash the mushrooms until flat. With a paper towel, dry any excess liquid.
  6. To bread mushrooms, first coat mushrooms in egg. Next, coat mushrooms in bread crumb mixture. Put back onto baking sheet until all mushrooms are breaded.
  7. Cook mushrooms in the air fryer at 400* degrees for 5-7 minutes or until golden brown.
